For this extraordinary wine, the best Sauvignon grapes are selected from the sloping vineyards of Girlan, Montiggl, Eppan Berg vineyards
at an altitude of 500 metres above sea level. The different combination of soils, from clay to lime and gravel, gives this wine its unique character.
The grapes are picked by hand and placed in small containers to prevent excessive pressure on the grapes. Soft pressing of the entire cluster
and clarification of the must by natural sedimentation. Fermentation in stainless steel tanks at controlled temperature. Maturation on lees for 8 months in stainless steel tanks and large oak barrels without malolactic fermentation.
The Sauvignon grape variety has been growing in Alto Adige for over a century. The intense bouquet of nettle and elderflower and the fresh lively flavour are typical qualities of this wine. Mineral character and fresh acidity balance the flavours.
