The Oratorio di San Lorenzo is a small valley surrounded by untouched countryside: a mystical place inhabited by monks for centuries. It is here that the Carmenere vineyard is located, the outstanding expression of which is the “Oratorio San Lorenzo”.
Upon arrival at the winery, the grapes are delicately stemmed, taking care not to damage the skin, and then manually selected on the sorting table. Then they undergo pre-fermentation maceration for 24-48 hours, followed by alcoholic fermentation for 30-32 days in concrete vats. This step alternates between pumping, hand-capping and delestage to encourage the extraction of flavors at a controlled temperature no higher than 28°C. At the end of malolactic fermentation, the wine is aged in French oak barriques (45% new, 55% used) for 6 months. Then the assemblage takes place, and the wine is returned to the barriques for another six months. The bottling of Oratorio di San Lorenzo is preceded by a 4-month aging in concrete tanks. The wine is then bottle-aged for at least 12 months before it is released to the market.

Projected into a fairy-tale dimension, the building takes on a broader meaning: the dancer, balanced on a ball, turns her back on the church to come face to face with God, who offers her a heart. This is the opposition between the sacred and the profane, of which wine is a metaphor. High in the sky, the sun bathes the Oratorio, symbolizing the pursuit of perfect maturity, which is the key to our project with Carmenere.”
