With Vulcaia Fumé, the company’s first wine, the idea was to make the Soave terroir famous, not with a classic wine, but with an interpretation of the Sauvignon grape. This wine is unique in its kind, standing apart from any trendy style or category.
Upon arrival at the winery, the grapes are cooled for several hours in a refrigerator, and then separated from the stalks. This is followed by cold maceration on the skins for 3-6 hours. After 24 hours of static settling, the must undergoes alcoholic fermentation in heavily toasted French oak barriques (30% first pass, 50% second pass, 20% third pass). Exposure lasts 6 months, during which periodical batonnage is carried out, after which the wine is poured into stainless steel. In November, Vulcaia Fumé is bottled and left in the cellars for several months before being released to the market.
Aroma of coffee, spices and flower petals. On the palate, notes of tropical and citrus fruits are revealed, as well as a great complexity of taste. Long and persistent aftertaste.
«The label shows the plan of the Berg Theater in Vicenza, built in the Roman era (1st-2nd century AD) under Emperor Hadrian using the “opus caementicium” technique of soft limestone from Colli Berici, highly valued for the ease with which they could work. Damaged by earthquakes and fires, the theater was dismantled between the 15th and 18th centuries, and its marble and statues were used in the construction of various buildings. Andrea Palladio, the supreme architect of Veneto, drew up his plan in the 1500s (Plan of the ancient theater of Vicenza). The sketch shows a reconstruction of the plan from the 5th book of Vitruvius by Daniele Barbaro (1556), redrawn and adapted by the architect Nicholas Wood.»
