Manual collection in boxes of 12 kg. Once at the winery, the grapes are placed in cold storage until they reach a temperature of 4°C. The clusters and their stalks are manually placed in the basket of the vertical press for pressing.
The wort is placed in a stainless steel tank in a refrigerator for 24 hours at a temperature of 2°C. When the must is clear, it is placed in 225 liter French oak barrels for 15 days at a maximum temperature of 20°C for alcoholic fermentation, along with fine lees.
When alcoholic fermentation is completed, the aging process begins.
For 6 months the wine will be in contact with the lees and woods to give it a more delicate taste, complex aromas and body.
Glossy, lively wine of lemon-yellow color with light golden notes after aging in a barrel. At first, the aromas are hidden in the nose, but as it breathes, intense and elegant aromas emerge.
Mineral notes appear first and then give way to a very fresh tropical fruit accent. Cri, Cri, Cri is a silky wine that fills the palate.
