The grapes are harvested by hand, from around early to mid-October. Vinification takes place at 100% after pneumatic pressing.
Fermentation at 20° to 25° C. Maceration for 12 days with automatic treading 3 times a day for 20 minutes. Full malolactic fermentation. Matures in stainless steel vats.
The colour is ruby red with hints of purple.
Aroma - characteristic, pleasant and delicate flavour with notes of fruits native to the area: cherries, maraschino and plums.
The flavour is medium-bodied, velvety smooth and balanced.
