Sauvignon is grown on the slopes of the Girlan vineyards between 400 and 500 metres above sea level in well-ventilated vineyards. The soil is rich in minerals, the result of Ice Age sedimentation. The influence of the Eastern Alps gives this wine its intense, characteristic bouquet. The grapes grow on glacial-marine soils and are harvested at the peak of maturity.
The grapes are picked by hand and placed in small containers to prevent excessive pressure on the grapes. Soft pressing of the entire cluster
and clarification of the must by natural sedimentation. Fermentation in stainless steel tanks at controlled temperature. Maturation on lees for 6 months in stainless steel tanks without malolactic fermentation.
The Sauvignon grape variety has been growing in Alto Adige for over a century. Elegant frame and fine consistency with intense notes. Excellent structure, aromatic and mineral, with a persistent flavour.
