Only carefully selected grapes, harvested on particularly fertile soil with low yields, are used to make this wine. Most of the grapes come from the vineyards in Ghirlan, which are planted on moraine soils very rich in fossils (porphyry rock) that give the wine its typical aroma, fullness and aftertaste. The rest of the grapes come from the land around Monte in the town of Appiano, where the soil is fresher than in Ghirlan (as the sun sets earlier here). The silty and clayey soils on a limestone base give the wine its freshness and flavour.
The grapes are picked by hand and placed in small containers to prevent excessive pressure on the grapes. Soft pressing of the entire cluster
and clarification of the must by natural sedimentation. Fermentation in 12 and 15 hl oak barrels followed by (partial) malolactic fermentation. Aging on lees in oak barrels for 12 months, 6 months in stainless steel tanks and 6 months in bottles before the wine is released as a Riserva.
Pinot Bianco has compact bunches of small greenish berries. It is the whitest grape variety grown in Ghirlan. The nose offers notes of pineapple and ripe fruit. An elegant wine with excellent structure, freshness and acidity. This Pinot Bianco provides extraordinary longevity and is a versatile wine for a wide variety of dishes.
