One third of the grapes selected for this extraordinary wine come from the slope of the Cru Girlan vineyards at an altitude of between 450 and 500 metres above sea level. They grow between 10 and 15 years old in the different vineyards. The remaining two thirds come from the Bassa Atezina - Cortaccia. The combination of mineral-rich gravel and clay soil gives this wine its unique character.
The grapes are harvested by hand and placed in small containers to prevent excessive pressure on the grapes. Gentle pressing of whole bunches and clarification of the must through natural sedimentation. Fermentation in stainless steel tanks at controlled temperatures. Maturation on lees for 8 months in stainless steel tanks without malolactic fermentation.
An intense, aromatic bouquet along with a soft, full character calls for flavourful dishes.
