Vinification and maturation: stem removal and pressing, 24 hours
Cryomaceration on the skins, sedimentation by gravity at 7-8°C, controlled fermentation in concrete vats for 20 days. Full maturation for at least 6 months with weekly batonnage.
Colour with greenish and pale yellow highlights. Impressive viscosity.
Delicate notes of spring wildflowers, fruits and herbs; acacia, primrose, apple, pink grapefruit, mint, vanilla, elderberry. Delicate and elegant, with a perfectly balanced flavour.
Seductive, rich, complex, pungent, mineral, very lingering. Suitable for long ageing.
