Meticulous care of the vineyard has improved the quality of the plots adjacent to the one on which the Oratorio di San Lorenzo wine is produced. The result is "Carminium", a more direct and pure approach to Carmenere, but not skimping on complexity and finesse.
The hand-picked grapes are delicately peeled from the stalks, taking care not to damage the skin of the berries. Before fermentation, maceration takes place for 24-48 hours, followed by alcoholic fermentation in stainless steel: it lasts 23-28 days at a controlled temperature of no more than 28°C. At the end of malolactic fermentation, the wine is matured in new French oak barriques (35%) and the other part of the wine is aged in once-used barriques (65%) for 12 months. The wine then spends 4 months in stainless steel and is bottled and continues to mature for at least 12 months before going on sale.
Bright ruby wine with a narrow purple rim. Intense aroma, with herbs and spices, black fruits, soft and balanced tannins.
