The phrase "The fullest expression of typicality" conveys the concept of fidelity to tradition. The label depicts a grape leaf whose veins have been replaced by lines of fingerprints, emphasising the importance of the human hand and the interaction between man and nature in the creation of this wine. The name Mattonara is a tribute to the sandstone quarry in which the winery is located, which was once used to produce bricks used in the construction of churches and villas.
This Riserva is produced only in the best years. It is distinguished from Amarone Clasicci by an even more rigorous selection of grapes harvested from the oldest vineyards, aged 20-50 years.
Three-month semi-drying of the grapes without the use of dehydrators, followed by pressing in January. Vinified in strict accordance with traditional methods, it is fermented on the skins in concrete vats for at least 2 months, at natural temperature and using ambient yeasts. After the initial pour, it is aged for about 9 years in Slavonian oak barrels and large ovals before being bottled in its tenth year. This prolonged ageing further reduces residual sugars.
It gets an extra year of bottle ageing.
Intense ruby red with garnet highlights, glycerin-infused, weighty.
The aroma has notes of ripe cherry, morello cherry, semi-dried plum, balsamic and spice.
The flavour is impressive, attractive and complex. Rich, lingering and superbly balanced, with hints of cherry marmalade, prune and chestnut blossom; it lengthens with age, developing delicate notes of pepper, black liquorice and cocoa powder.
