This Chardonnay represents an expression of terroir. It is the only wine made from Chardonnay grapes grown on both volcanic and limestone soils. Subtle and floral.
On arrival at the winery, the bunches are separated from the stalks and processed using a "non-reductive" technique, i.e. without the addition of SO2: this allows the local microflora to develop and give character to the must. From 1 to 3 hours of maceration, the mentioned process is intensified on the skins. After 24 hours of static settling, the must undergoes alcoholic fermentation in stainless steel tanks at a controlled temperature of 16-18°C. The wine is then aged before bottling.
Bright yellow in colour. Bright flavours: intense aroma of pears and apple. Bright flavour with notes of apple, pear and banana. Fresh, persistent aftertaste.
"The label depicts an optical experiment taken from Diderot's Encyclopédie, an extensive work published in the 18th century and the first widely distributed modern encyclopaedia. The label is inspired by the film The Draughtsman's Contract by British director Peter Greenaway, which, in an 18th-century context, focuses on the theme of the relationship between reality (itself ambiguous) and its representation, which - far from allowing it to be deciphered - makes it all the more complex."
