For over 50 years, Pinot Grigio has been growing on clay soil, with good ventilation, close to the sea and the mountains. This white wine impresses with an intense aroma that moves from exotic fruits to spices, revealing a breadth of flavour and long persistence.
The soil is alluvial, consisting of "caranto", a mixture of white clay and minerals from the Dolomite Alps. The climate is mild, with very little rainfall and high summer temperatures, allowing the grapes to ripen perfectly. To achieve perfect ripening of the grapes, in addition to the usual vineyard maintenance, we carry out summer pruning. In addition, yields are kept very low to produce grapes with rich flavour. Harvest is early September, when the grapes are very well ripened but still have a good level of acidity. The stems are removed and the grapes crushed, the grapes gently pressed, cold static clarification and fermentation at controlled temperatures in stainless steel vats. The wine is then aged for several months on noble lees in concrete vats at controlled temperatures. The lees are often blended to increase the density and smoothness of the wine. The colour is straw yellow with copper hues, elegant and delicate bouquet, with fruity notes, full body, with an aftertaste of nuts and toasted almonds. It should be stored in a cool and dark place, keeping the bottle in a horizontal position. Its structure and complexity allow the wine to improve during maturation in the bottle, which can last up to 7 years, reaching its peak 3 years after the grapes are harvested.
