Description

The soil has an ideal structure for growing grapes, with the right amount of clay and limestone.
Climate: mild, with sharp temperature variations between day and night, ideal for preserving the flavour and acidity of the grapes.
Vineyard care: in order to achieve perfect ripening of the grapes, summer pruning and careful leaf thinning are carried out in addition to the usual vineyard care. In addition, the harvest is kept very low to produce grapes with rich body and flavour.
Harvest: late August for Pinot Nero and mid-September for Glera.
Vinification: pressing of the grapes, cooling of the must to 0°C and subsequent single fermentation at 15°C in the sparkling wine process.
Tasting characteristics: fine and persistent perlage, delicate salmon colour, fruity aroma with hints of pear, strawberry, raspberry and violet; elegant, light and aromatic.
