Kkhikhvi is a rare Georgian grape variety. Grapes are very sensitive to climatic changes and grape diseases. The vineyard is located 15 min away from the winery. The harvest is picked early in the morning to make sure the grapes are cool before fermentation. The wine is fermented in a kvevri using wild yeast. After fermentation, it is stored with skins for 6 months. After 6 months in the kvevri the wine is naturally clear and stable, but the wine goes through a coarse filter so that no coarse particles appear at bottling. The wine is amber in colour, transparent. In the aromatic characteristics one can notice charming aromas of walnuts and honey. In addition, one can perceive aromas of yellow stone fruits such as apricot and quince. The same aromas show up on the palate, so we can say that the wine is harmonious. The wine has a full body, tartness and tannins.
