Chkapa is a Georgian endemic grape.
Vineyards are treated only with battlefield products without chemical additives.
Hand picking grapes in early October.
The first fermentation of the wine takes place in a kvevri, which is buried underground. Fermentation on the mash is 30 days, after which the wine is separated and poured into another kvevri above ground, where it is aged for two months on lees with battonage.
Later the wine is separated from the lees once more. Matured in the cvevry after 7 months.
The aroma has citrus, wildflowers, but after aeration notes of spices and dried fruits appear.
Very balanced on the palate. Soft tannins. Long aftertaste.
