Sauvignon is grown on the slopes of the Girlan vineyards at an altitude of 400 to 500 meters above sea level in well-ventilated vineyards. The soil is rich in minerals, which is the result of ice age sedimentation. The influence of the Eastern Alps gives this wine its intense, characteristic bouquet. Grapes grow on glacier-morainic soils and are harvested at the peak of maturity.
The grapes are harvested by hand and placed in small containers to prevent excess pressure on the grapes. Soft pressing of the entire cluster
and clarification of the must by natural settling. Fermentation in stainless steel tanks at controlled temperature. Aging on the lees for 6 months in stainless steel tanks without malolactic fermentation.
The Sauvignon grape variety has been growing in Alto Adige for over a century. Elegant frame and fine texture with intense notes. Excellent structure, aromatic and mineral, with a persistent taste.
