In the local dialect, the word “Olmera” means an old forest of elms that in the past grew on the land where the vineyard is today. These elms release certain elements into the soil that give this wine a special structure and personality.
Produced on the estate of Le Ronche, located in Fossalta di Piave. “Le Ronche” is the name of the place where the Tocai and Sauvignon vineyards are located, about 10 km from the Adriatic Sea and 50 km from the Dolomites.
The soil is alluvial, consisting of caranto, a mixture of white clay and minerals from the Dolomites.
The climate is mild, with very little rain and high summer temperatures, allowing the grapes to ripen under the best conditions.
In order to achieve ideal ripening of the grapes, in addition to the usual care of the vineyard, summer pruning is carried out. In addition, a green collection is made in order to improve the quality indicators and concentration of berries.
Harvest – early to mid-September, when the grapes reach their peak quality.
Destemming and crushing, soft pressing and fermentation at controlled temperature in barrique. Tocai grapes are dried for one month with the development of noble rot of the grapes. Sauvignon grapes are not dried. Tocai is fermented and refined on noble lees in barriques, while Sauvignon is fermented and refined on noble lees in concrete tanks. The lees of both wines are often blended to increase the body and harmony of the wine.
Intense straw yellow color with golden hues, rich aroma, with an intense bouquet of ripe fruits, strong body, smooth, velvety, very long lasting, with an aftertaste of exotic fruits.
In a cool and dark place, keeping the bottle in a horizontal position. Its structure and complexity allow the wine to improve during bottle maturation, which can last up to 15 years, reaching its pinnacle 7-8 years after harvest.
