Khavnchkara is produced using the Racha-Lechkhumi technology adapted to a cooler climate. Wine is made with a stop of fermentation without the addition of alcohol, by cooling. In this case, grapes with a high sugar content are not fully fermented, and the wine remains natural.
The purple color of Khvanchkara is characterized by aromas of raspberries and red currants, accompanied by natural cherry aromas. The taste of wine is like that of a real Racha man, calm, but cheerful and velvety. The wine creates an amazing duet with ham and other delicacies such as the nikva mushroom from Racha. Khvanchkara is perfectly balanced and complemented with flavors of churchkhela, hazelnuts, walnuts, cheese and fruits.
