Produced on the estate of Le Ronche, located in Fossalta di Piave. “Le Ronche” is the name of the place where this Cabernet Sauvignon vineyard is located, about 10 km from the Adriatic Sea and 50 km from the Dolomites.
The soil is alluvial, consisting of caranto, a mixture of white clay and minerals from the Dolomites.
The climate is mild, with very little rain and high summer temperatures, allowing the grapes to ripen under the best conditions.
In order to achieve ideal ripening of the grapes, in addition to the usual care of the vineyard, summer pruning and careful thinning of the leaves are carried out. In addition, the harvest is kept very low in order to produce grapes with rich body and aroma.
Picking – late September – early October, very ripe berries are harvested, with deep color and full aromatic structure.
De-stemming and crushing of grapes, maceration and fermentation at controlled temperature with frequent pumping. After this period, the wine is taken out and fermented in stainless steel vats. The wine matures for 8-12 months on noble lees in oak barriques and barrels.
Intense ruby color, bouquet of ripe red fruits, full body, smoothness, the right level of tannins and hints of wild fruit.
Its structure and complexity allow the wine to improve during bottle maturation, which can last up to 15 years, reaching its peak 10 years after harvest.
