Vineyards are located in the municipality of Negrar, San-Pietro-in-Cariano and Marano di Valpolicella, at an altitude of 100 to 400 m above sea level. Clay-limestone soil.
The grapes are harvested exclusively by hand, starting in mid-September. After careful selection, the grapes are placed in small wooden boxes and left to dry. Around the end of December, the grapes are gently pressed and left to slowly ferment. The wine is aged partly in Slavonian oak barrels (30 hectoliters) and partly in barrels (5 hl) for 5 years.
Color – intense garnet red.
The aroma has a magnificent intensity with an ethereal aroma and fruity notes of black cherry in alcohol and prunes, a bouquet of dry flowers and a touch of sweet spices.
The taste is structured and a certain softness, contrasting with velvety tannins.
If properly stored and kept at a constant temperature of 14-15°C, in a recumbent position and in the dark, it can maintain its characteristics for 15-18 years.
