Description

Shavkapito is an endemic variety of the Kartli region of Georgia. The name comes from "shavi", which means "black". Goga Tevzadze, a winemaker from Tevza, is dedicated to studying, preserving and promoting the local varieties of Kartli. A total of 1,200 bottles have been released. It's a bit crazy and lively, but who among us isn't?
The grapes are hand-picked at optimum maturity and carefully transported from the 14-year-old vineyards (a distance of 30 kilometres) to the Teuveza winery and directly crushed in the kvevri. Wild fermentation begins at room temperature. Spontaneous fermentation stops when the wine becomes dry, followed by natural MLF fermentation. After analysing and tasting the wine, we fill each individual kvevri from reserved batches of the same wines. Maceration and skin contact for 3 to 4 weeks.
Harmonious aromas of prune with hints of cherry. Fragrant and lively, with dried Cornelius and wild berries. Distinctive varietal character.
