Plavis is a tribute to the Piave River (from the Latin Plavis), which runs entirely through the Veneto from the Dolomite Alps to Venice, considered a "river sacred to the country" as it was a theatre of war during the Great War. Derived from Merlot grapes, one of the most traditional varieties of the Piave region, it has a bouquet of ripe red fruit and a smooth texture. Rich body and exceptional longevity.
The soil is alluvial, from "caranto", a mixture of white clay and minerals from the mountains of the Dolomite Alps.
The climate is mild, with very little rain and high summer temperatures, allowing the grapes to ripen in the best conditions.
To achieve perfect ripening of the grapes, summer pruning and careful leaf thinning are carried out in addition to the usual vineyard maintenance. In addition, the yields are kept very low to produce grapes with rich body and flavour.
Harvest - late September, picking very ripe grapes with deep colour, full aromatic structure and soft tannins.
Cleaning and crushing of the grapes, maceration and fermentation in special tanks at controlled temperature with frequent pumping over. After this period, the wine is extracted and finished fermenting in stainless steel vats. The wine matures for 8 months on noble lees in oak barrels and 12-18 months in bottles.
Intense ruby colour, bouquet of ripe red fruits, full body, smooth, with the right level of tannins and pleasant wild fruit notes.
