Description

The Oratorio di San Lorenzo area is a small valley immersed in unspoilt countryside: a mystical place inhabited by monks for centuries. It is here that the Carmenere vineyard, of which Oratorio San Lorenzo is an outstanding expression, is located.
Upon arrival at the winery, the grapes are gently removed from the stalks, taking care not to damage the skins, and then hand-picked on a sorting table. They then undergo pre-fermentation maceration for 24-48 hours, followed by alcoholic fermentation for 30-32 days in concrete vats. This stage alternates between pump-over, manual lid knocking and de-stemming to encourage flavour extraction at a controlled temperature of no more than 28°C. At the end of malolactic fermentation, the wine is aged in French oak barriques (45% new, 55% used) for 6 months. The wine is then assembled and returned to the barriques for a further six months. The bottling of Oratorio di San Lorenzo is preceded by a 4-month ageing in concrete tanks. The wine is then aged in bottles for at least 12 months before being released to the market.

Projected into a fairy-tale dimension, the building takes on a broader meaning: a dancer balancing on a ball turns her back to the church to come face to face with the God who offers her heart. It is an opposition between the sacred and the profane, metaphorised by wine. High in the sky, the sun bathes the Oratorio, symbolising the pursuit of perfect maturity, which is key to our project with Carmenere."
