Description

In the local dialect, the word "Olmera" means old elm forest, which in the past grew on the land where the vineyard is today. These elms release certain elements into the soil that give this wine its particular structure and personality.
Produced at the Le Ronche estate located in Fossalta di Piave. "Le Ronche" is the name of the place where the Tocai and Sauvignon vineyards are located about 10 kilometres from the Adriatic Sea and 50 kilometres from the Dolomite Alps.
The soil is alluvial, consisting of caranto, a mixture of white clay and minerals of the Dolomite Alps.
The climate is mild, with very little rain and high summer temperatures, allowing the grapes to ripen in the best conditions.
In addition to the usual vineyard care, summer pruning is carried out to achieve perfect ripening of the grapes. In addition, green picking is carried out to improve the quality and concentration of the berries.
The harvest is early to mid September, when the grapes are at their peak quality.
Separation of the grapes from the combs and crushing, gentle pressing and fermentation at controlled temperature in the barrique. Tocai grapes are dried for one month with the development of noble grape rot. Sauvignon grapes are not subjected to drying. Tocai is fermented and purified on noble lees in barriques, while Sauvignon is fermented and purified on noble lees in concrete tanks. The lees of both wines are often blended to increase the density and harmony of the wine.
Intense straw-yellow colour with golden hues, rich aroma, with an intense bouquet of ripe fruit, firm body, smooth, velvety, very long lasting, with an aftertaste of exotic fruit.
In a cool and dark place, keeping the bottle in a horizontal position. Its structure and complexity allow the wine to improve during maturation in the bottle, which can last up to 15 years, reaching its peak 7-8 years after harvest.
