The label shows Kairos' connection to the Harlequin project: the Harlequin costume is made up of pieces of different colours, just as the wine is made up of 15 different grape varieties, each with its own characteristics. In ancient Greek, Kairos means "timely, at the right moment".
The addition of a sundial and a simple clock expresses the idea of accurate time.
Organic fertilisation and hand pruning; shoot thinning, leaf removal, bunch thinning. The grapes are harvested by hand depending on the maturity of each individual variety; after careful selection for quality, the bunches are placed on drying trays only for the time required to harvest the entire crop, from 0 to 40 days.
Vinification is carried out in steel and concrete vats; cryomaceration and fermentation with indigenous yeasts takes about 20-25 days, with the only operation being the manual stirring of must and pomace. 8-10 days after bottling, the wine goes into French oak barrels where it ages for at least 24 months without racking. It gets a minimum of 1 more year in bottle.
The colour is a bright, thick ruby red with garnet highlights as it ages.
The fragrance is a mosaic of fruits, flowers and earthy minerals alternating with each other.
On the palate, an impression of enveloping richness and complexity. Fruit, spice and higher alcohols alternate with fruit marmalade and forest floor, followed by pipe tobacco, cinnamon, nutmeg and clove, combining with minerality to show the great depth of this wine. The wine finishes with a long aftertaste and
an attractive note of sweetness.
