Chardonnay and Gewürztraminer grapes are harvested separately when they reach optimum maturity. When they reach the winery, they are lightly crushed and gently pressed. The must is left to clarify under gravity for 48 hours to remove thick lees and seeds and avoid herbal aromas. Alcoholic fermentation takes place in stainless steel tanks at 14°C to 17°C for about two weeks.
After fermentation is complete, the two varieties are mixed and aged on sediment for 4 months in stainless steel tanks at 12°C.
One month prior to bottling, weekly batonnage is discontinued and the wine is left to clarify by gravity.
The combination of Chardonnay and Gewürztraminer makes 12 Lunas a very elegant white wine. Lemon yellow in colour with an intense aroma and notes of peach syrup and pineapple.
It tastes silky, buttery, fresh, very aromatic and rich.
