Description

In a word: natural sweetness.
This is one of the oldest Valpolicella wines. It is a sweet wine and one of the few that does not require the addition of sugar or alcohol. Its name comes from the dialect word "Recie" (ears), which corresponds to the upper part of the bunch of grapes, very rich in sugar and other elements.
Residual sugar 49.60 g/litre.
Very careful selection of grapes harvested from the oldest vines.
After a long drying process in January, the grapes, together with the skins, are fermented in concrete vats for over two months. It is then aged in 500 litre Slavonian oak barrels for five years before bottling.
Appearance: ruby red in colour with purple hues.
Characterised by ripe but crisp fruit, direct and precise aromas of cherry, blackberry from Cazzano, prune, blackcurrant and blueberry, supported by spices, especially pepper notes.
Beautiful, warm and complex, with a spicy note reminiscent of black pepper. In aroma and right after you taste it, it is sweet and soft, well balanced with acidity and tannins. The aftertaste is very lingering with notes of spices and dark chocolate.

Fermentation

Stainless steel / Slavonian oak barrels
