Description

The vineyards are located in the municipality of Negrar, San Pietro in Cariano and Marano di Valpolicella, between 100 and 400 metres above sea level. Clay-limestone soil.
The grapes are harvested exclusively by hand, starting in mid-September. After careful selection, the grapes are placed in small wooden crates and left to dry. Around the end of December, the grapes are gently pressed and left to ferment slowly. The wine is aged partly in Slavic oak barrels (30 hectolitres) and partly in casks (5 hl) for 5 years.
The colour is a deep garnet red.
The aroma has a waelike intensity with ethereal aroma and fruity notes of black cherries in alcohol and prunes, a bouquet of dried flowers and a touch of sweet spices.
The flavour is structured and a certain softness contrasting with velvety tannins.
Food pairing: traditionally paired with game, roasted or stewed meats and aged cheese.
If stored properly and at a constant temperature of 14-15° C, lying down and in the dark, it can retain its characteristics for 15-18 years.
